Chef Danny Peñalo and the Evolution of Dominican Cuisine Abroad

Chef Danny Peñalo, Executive Chef at Yarumba Dominican Restaurant in Miami and a respected figure in the Dominican community of Broward County, Florida, recently shared valuable insights on the transformation of Dominican cuisine in the United States during his appearance on the TV show Somos RD.

In a rich and personal conversation, Danny reflected on how Dominican food — once considered niche and folkloric — has evolved into a culinary and cultural experience that blends tradition, elegance, and pride, especially within Dominican-American communities in Broward County and South Florida.

From Tradition to Innovation

In earlier times, Dominican restaurants abroad were simple spots offering homestyle meals like la bandera or sancocho. Today, establishments like Yarumba — where Chef Danny Peñalo leads the kitchen — are redefining the experience. Many of these restaurants in Broward County now combine great food with ambiance, live music, and modern presentation.

“You can proudly invite a friend from another culture to a Dominican restaurant and give them a full experience,” says Chef Danny.

Dominican Gastronomy on the Rise in Broward County

Chef Danny has witnessed how Dominican food has gained recognition beyond the community. In Broward County and surrounding areas, Dominican restaurants have expanded in number and influence, attracting a diverse clientele. “Today, 50% of our customers are not Dominican,” he notes.

This reflects a cultural shift where the Dominican culinary experience is no longer just nostalgic — it’s aspirational, elevated, and welcoming to all.

Signature Creations and Fusions

Chef Danny shared some of his most creative dishes, such as croquettes made with moro de guandules, coconut and ripe plantain, or a fried fish stuffed with Thai rice, shrimp, and coconut sauce. These innovations reflect both his Dominican roots and international training — appealing to food lovers across Broward County and South Florida.

Restaurants as Cultural Hubs

As he explains in the interview, Dominican restaurants are no longer just about food. At Yarumba — which attracts visitors from Broward County regularly — guests also enjoy live performances, DJs, cocktails, and a vibrant social atmosphere.

“We’re Latin — we love to eat, dance, and celebrate in one place,” says Chef Danny. “Now you can do all of that without leaving your table.”

A Growing Culinary Movement in South Florida

Chef Danny also highlights the growing presence of Dominican chefs and investors opening new venues in the area. As more Dominican professionals bring their expertise to Florida, the local food scene — especially in Broward County — becomes more dynamic and inclusive.
